Imagine being the kid at the birthday party who never gets a slice of cake or scoop of ice cream. Imagine having to examine every menu before choosing a restaurant to go to with your friends. Imagine a trip to the grocery store where you have to bypass nearly every aisle in order to get food that won’t make you sick.

For three million Americans, these scenarios are realities. Celiac disease affects one percent of the American population and can affect men and women of all ages. An estimated 83% of people with celiac disease are currently undiagnosed or misdiagnosed, and it takes an average of six to ten years for someone to be correctly diagnosed with the disease.

Furthermore, the only treatment for those with celiac disease is a gluten-free diet.. This may sound simple, but gluten-free products can often be difficult to find. Additionally, they are significantly more expensive than their gluten alternatives. A study published by the National Center for Biotechnology Information compared the price of products to their gluten-free alternatives. The study found that, on average, gluten-free products are 242% more expensive than their counterparts.

Those with celiac disease are faced with several obstacles when it comes to leading a healthy lifestyle. However, one woman in the Nashville area is working to make life easier for those with the disease.

Vivi Peatman, a gluten-free baker, has opened her very own gluten-free bakery in the Sylvan Park area of Nashville. Vegan Vee is an all-vegan and gluten-free takeout bakery that caters to individuals on restrictive food diets.

The unique bakery’s website sums up its mission in the following statement:

We only use ‘real’, predominately Organic ingredients, like fresh fruit (Local and Organic whenever possible), Certified GF flour, Organic maple syrup,Organic evaporated cane juice, real vanilla bean and Organic/ extra virgin coconut oil. We are a Peanut-Free Facility and carry Soy-Free and Nut-Free items daily. We also offer Raw desserts (Organic, Raw Agave sweetened), GF bread rolls and chocolates. We do not use any artificial colors or flavors in any of our products.

Walk into the store in Sylvan Park and you will be amazed by the wide selection of doughnuts, muffins, cakes, cupcakes, brownies, truffles, savory rolls, and cookies. But what’s even more incredible is the striking similarity these baked goods have to other goods made with gluten or eggs. It is impossible to tell the difference, which is an extraordinary feat.

The bakery is open on Fridays and Saturdays from 7am to 1pm. If you can’t make it there during these hours, not to worry! Vegan Vee products are sold at the following places:

The bakery is providing a haven for those with food restrictive diets, something much needed in the Nashville area. But whether or not you’re on a food restrictive diet, Vegan Vee is worth the try.
